COPYCAT FIESTA LIME CHICKEN

Chicken and veggies gets old so fast - Try this copycat recipe for fiesta lime chicken that tastes just like the one from Applebees (AND it's healthy)!

Who doesn't love a good twist on a "taco Tuesday"? Healthy, tasty and super easy.
Ingredients:
2 chicken breasts
Can of black beans (I used Bush's brand)
1 cup Quinoa (I used simple truth brand)
2 cups of broccoli
Tortilla strips (add a few on top- the fiesta flavor is amazing)
Shredded cheddar cheese (added to the top of the chicken)
Sauce:
1 tsp ranch dressing (I used Kraft brand)
2 tbsp plain greek yogurt (I used Chobani brand)
Lime juice (to taste about 1/2 a small lime)
1 tbsp salsa
Pico de Gallo:
1 tomato
Fresh Cilantro (to taste)
Onion (diced - to taste)
How to put it together:
- Grill the chicken breasts
- Simultaneously cook the quinoa (this takes about 10-15 minutes)
- I also hasted up the black beans at the same time as well
- While these items are cooking, I created the sauce by mixing all ingredients (ranch, plain greek yogurt, lime juice and salsa) - set aside to top the chicken with.
- Steam the broccoli, set aside
-Chop tomato, onion, cilantro and put in a cup or bowl, add lime juice, mix and set aside
-Once the chicken is done on the grill - place on a pan (I did this in a small pan in my toaster oven, if you increase the recipe and add more chicken breasts, you may want to use a full size pan in the oven) top the chicken with the sauce, cheese and tortilla strips
-Heat the chicken with toppings until the cheese is melted
-Time to plate! Start with quinoa (if you use the portion fix cups 1 yellow cup) about 1/2 a cup, add about 1/2 cup of black beans, place chicken on top of that. Finally top the chicken with the pico mixture and add the broccoli on the side
