Who doesn't love a fresh muffin in the morning? And can I just say how good my house smells with these in the oven - To die for. This Beachbody fixate recipe (with a few additions) has quickly become one of my go to breakfast snacks.
Beachbody nutrition and fitness is not about a diet - it is about a lifestyle change. It is about learning to eat whole and treat your body from the inside out. To fuel your body properly throughout the day. But you don't have to sacrifice your favorite foods or great taste to do that.
Serving Size: 1 muffin Prep-Time: 20 minutes Cook time: 22 minutes
2 Large eggs, lightly beaten
1 cup Mashed ripe banana (about 2 medium bananas)
1 tbsp. unsalted organic grass-fed butter, melted (I use Ghee)
1 1/2 cups almond flour
3/4 tsp. baking soda, gluten free
1 dash sea salt (I use pink Himalayan sea salt)
1/2 cup chopped apple (about 3/4 medium apple)
1/2 tsp of pure vanilla extract
Cinnamon - to taste. I usually add about a tsp or so
-Non-stick cooking spray
Preheat oven to 350° F.
Lightly coat muffin pan with spray. Set aside.
Combine eggs, banana, and butter in a medium bowl; mix well. Set aside.
Combine almond flour, baking soda, and salt in a medium bowl; mix well.
Add almond meal mixture to egg mixture; mix until blended.
Add cinnamon and vanilla extract to batter.
Add apple (I leave the skin on the apple, you can peel if you prefer); mix until just blended.
Divide batter evenly in muffin pan, 3⁄4 full (approx. 1⁄4 cup).
Bake for 18 to 22 minutes, or until golden brown and toothpick inserted into the center comes out clean.
Transfer muffins to rack; cool.

I typically eat one of these in the morning with a hardboiled egg- great snack! And the best part is, it doesn't even count as a carb for the day 😉.
